Ingredients
For Red Chilli Garlic Chutney:
- 12-13 Kashmiri Chillies, Soaked and Deseeded
- 10-15 Garlic Cloves
- 2 Green Chillies
- Salt to taste
For Khada Pav Bhaji:
- Boiled Vegetables (Potatoes, Cauliflower, Peas, Capsicum, Carrot)
- 3 Tbsp Butter
- 1 Tbsp Oil
- 1 Diced Onion
- 1 Tbsp Ginger-Garlic Paste
- 1 Tbsp Red Chilli Garlic Chutney
- 2 Tbsp HeriMore Pav Bhaji Masala
- Carrot and Capsicum, Diced
- 2 Tomatoes
- Fresh Coriander Leaves and Lemon Juice, For Garnish
For Salad:
- Chopped Onions
- Grated Cabbage
- Coriander
- Lemon
- Salt to Taste
For Dough:
- 1 Cup Whole Wheat Flour/Atta
- 1 Cup All-Purpose Flour/Maida
- 2 Tsp Oil
- Salt to Taste
For Frankie:
- Chapatis/Rotis, Partially Cooked
- Chilli Garlic Chutney
- Pinch of Amchur Powder
- Mayonnaise
- Grated Cheese (optional)
Instructions
Step 1:
For Red Chili Garlic Chutney: Grind the soaked kashmiri chillies with garlic, green chillies, and salt into a smooth paste. In a pan, heat butter and oil, add jeera, kashmiri red chilli powder, HeriMore Pav Bhaji Masala, and the paste. Let it cook until it releases oil.
Step 2:
For Khada Pav Bhaji: In a pan, heat butter and oil, add onion and cook until translucent. Add ginger-garlic paste, red chilli garlic chutney, HeriMore Pav Bhaji Masala, carrot, capsicum, tomatoes, and all boiled vegetables. Do not mash it too much, keep it on the chunky side for texture. Garnish with lemon juice, fresh coriander leaves and set it aside.
Step 3:
For Salad: Mix chopped onions, grated cabbage, coriander, lemon, and salt.
Step 4:
Prepare the Frankie: Cook roti/chapatis partially, spread your freshly prepared red chilli garlic chutney, mayonnaise on one side and sprinkle it lightly with amchur powder. In the centre, add the khada pav bhaji vertically with salad on top, and grated cheese if desired. Roll the chapati and cook on a tawa or grill to make the Frankie.
