- 1 Cup Basmati Rice (Soaked For 10 To 15 Minutes)
- 2 Medium Potatoes, Peeled And Cut Into Large Pieces
- 1 Carrot, Cut Into Medium Sized Pieces
- 1 Cup Green Peas
- 1 Tomato, Chopped
- 1 Small Cauliflower, Cut Into Florets
- 1 Big Onion
- 6 To 8 Garlic Cloves
- 1 Inch Ginger
- 2 Slit Green Chillies
- 1 Inch Cinnamon Stick
- 8 To 10 Black Peppercorns
- 1 Piece Of Star Anise
- 2 To 3 Bay Leaves/Tej Patta
- 3 To 4 Cloves
- 1 Piece Of Javitri/Mace
- 2 Tbsp HeriMore Coriander/Dhaniya Powder
- ½ Tbsp HeriMore Red Hot Chilli/Lal Mirch Powder
- 1 Tsp HeriMore Turmeric/Haldi Powder
- 1 Tsp HeriMore Punjabi Garam Masala
- 2.5 Tbsp Ghee Or Mustard Oil
- 1 Tsp Jeera/Cumin Seeds
- Fresh Coriander Leaves, Chopped For Garnish
Instructions
Step 1:
In a blender, grind together the onion, garlic, and ginger to form a smooth paste.
Step 2:
Next, in a thick bottomed pot/kadhai, heat 2.5 tbsp of ghee or mustard oil. Add jeera and the whole spices (cinnamon, black pepper, star anise, tejpatta, cloves, and javitri) to infuse the oil with its rich flavours. Once the spices release their aroma, add the ginger-garlic-onion paste and cook until the mixture leaves the ghee and turns golden brown. Add the soaked powder masalas HeriMore Dhaniya Powder, HeriMore Red Hot Chilli Powder and HeriMore Turmeric Powder and cook until the oil separates, enhancing the dish’s depth of flavour.
Step 3:
Toss in the potatoes, carrots, green peas, cauliflower, and the chopped tomato. Sauté for a few minutes, allowing the veggies to soak in the spices. Drain the soaked basmati rice and add it to the pot, sautéing for an additional 2 minutes to coat it with the masala. Pour in 2.5 cups of hot water, ensuring the rice is submerged. Cover the pot with a lid and simmer on low to medium heat until the rice is cooked and fluffy, absorbing all the delicious and rich flavours.
