Ingredients

  • Mixed Vegetables: 1 Small Cauliflower, 2 Carrots, 1 Potato, 1 Cup Green Peas, 3 To 4 Beans
  • 2 Onions, Finely Chopped
  • 4 Garlic Cloves, Minced
  • 1 Inch Ginger, Grated
  • 2 To 3 Chopped Tomatoes
  • 1 To 2 Tbsp Tomato Puree
  • 100 Gms Paneer, Cubed
  • ½ Tsp HeriMore Coriander/ Dhaniya Powder
  • 1 Tbsp HeriMore Sambar Masala
  • 100 Gms Boiled Chickpeas
  • 150 Ml Coconut Milk
  • 150 Ml Vegetable Stock (Optional)
  • Fresh Coriander Leaves, Chopped For Garnish

Instructions

Step 1:

In a large pan, heat 2 tbsp of ghee. Add the chopped onions and minced garlic, sautéing until they turn golden and fragrant. Stir in HeriMore’s Coriander/ Dhaniya Powder and HeriMore’s Sambar Masala, cooking for a few minutes to release the spices' rich flavours.

Step 2:

Add the chopped tomatoes and tomato puree, cooking until the mixture releases its ghee and forms a thick paste. Next, add in the mixed vegetables and vegetable stock, cooking until all the vegetables are tender.

Step 3:

Stir in the cubed paneer, green peas, and boiled chickpeas, mixing well. Then pour in the coconut milk and heat through until everything is warmed. 

Step 4:

Finish with a sprinkle of fresh chopped coriander for a burst of colour and freshness. Serve this delightful Sambar Veg Curry hot with steaming rice for a truly satisfying meal.
